    The sloe fruit is hard to separate from the seeds, so it must not be crushed and distillation must be carried out as soon as the fermentation has stopped. To reduce the level of bitterness, they must first be frozen. The fruit can often be picked at the end of December.

    Most often too little pig iron can be produced for a second distillation. Therefore, it is possible to combine the once-wired sloe raw material with one or two portions of pig iron from mirabelles. (It is best to harvest the mirabelles from the ground when they are very mature, leave no more than 10 percent of the seeds. Set the mirabelles to acidify and add pectinase and then the noble yeast). By distilling the combined salad of mirabelles and blackthorn, keep an aromatic, milder-tasting mixed distillate. Very good taste results are given by ageing such a distillate in an oak barrel.
